to preface: i wouldnt want to stay too long but enough time to have a comfortable leave not rush packing everything
im currently on my last 3 months of a year course at a language school, but various physical and mental disabilities have catching up with me and i dont know if ill be able to complete the year
im considering if it would be worth forcing myself to stay given how much my body is struggling- or end early, but i dont know how long id be able to stay afterwards or what the procedure is
everywhere seems to say ‘short amount of time’ but i cant find any specifics, especially not for dropouts

If you do not complete your course (ie graduate), and take a leave of absence or quit, you would be required to [notify immigration](https://www.isa.go.jp/en/applications/procedures/nyuukokukanri10_00014.html) that you have left your school, and leave Japan within 14 days of the start date of your leave of absence/quit date. If you need to stay for longer than that, you must contact immigration and complete the procedure to change your SOR (Status of Residence) accordingly.
Before you return to continue your studies, you’ll need a new COE from your school, to get a new visa at that time.

You have 3 months after leaving school before your status of residence can be revoked (source https://www.moj.go.jp/isa/applications/procedures/torikeshi_00002.html point 6)
two options to do within the 14 day timeframe after you graduate/quit school:
you can notify immigration and get a 30 day designated activities (特定活動) visa under the basis of preparations for departure (出国準備)
or you can convert to temporary visitor (tourist visa) but also involves you having to prove expenses etc2
I went to the immigration office because I’m in a similar situation as you. They refused to provide any tourist visa which breaks Canada/Japan treaty E102544, but I was told by agents there that as long as I plan to leave within 3 months I can stay. There are too many contradictions to the rules unfortunately.
