Itinerary check 10 days in Japan early April

Hi all,
Am travelling to Japan for the first time with my family for 9 days/ 10 nights.
Need advice on the below itinerary. Anything great that I’m missing out on or anything I can cut out.
I think It’s a bit overpacked at the moment, so any advice on plans which seem unfeasible will be appreciated.

Also want to know if the drive from Tokyo to Kyoto/ Osaka to Tokyo is scenic and worth renting a car vs taking the train.

We’re all actually vegetarian so really need food suggestions. Would it be worth it for us to visit the food streets and iconic restaurants?
