Is dining at the sub-counter with the sous chef at high end sushi restaurants worthwhile? (Tokyo)

From reading online, it seems like many of the very well reviewed high end sushi restaurants don’t allow foreigners to sit at the main counter. I tried researching specifically about going to these restaurants and eating with the sous chef (which I can find open reservations for), but I couldn’t find any reviews mentioning those experiences.

I was wondering if anyone has had experience with dining with the sous chef, and if the experience was still worthwhile (for the cost, ambiance, etc).

[I currently have reservations at Sushi Ryujiro, in case anyone has specifically been there, but I just want to hear about your experiences in general!]

This is my first time going to Japan, and I’m developing a lot of travel anxiety about being unintentionally disrespectful. If being a foreigner and dining at places like this is not well received, I might prefer not to encroach on others and just dine where I’m not bothering others.
