So I got a humanities/International services Visa. I have yet to arrive, supposed to arrive next month. But the company said I voided my contract and they informed immigration (Scheduling issue whatever.) I know that Visa isn’t tied to a job but would I still be permitted in the country? Or is it the case that if my initial sponsor pulls out before I arrive I will be turned away?

Yes. If your company has informed immigration that they are no longer employing you the visa is no longer valid.
If you were in Japan and they’d fired you you would be allowed to stay and look for new work. But since you haven’t entered yet… Nope.
You’ll need to look for a new employer to sponsor a new visa.
