A friend is a sushi chef and asked me to look for a Taiwanese fish knife. The design is Taiwanese but the internet suggests many people that make them are in Japan. I have checked a few shops and not found one. I will be in Tokyo, Osaka, and Kyoto.

can check out asakusa kappabashi area. I just went to tsubaya knives and bought a new gyuto. very good customer service, will do business once again.
the Taiwanese knife looks like a deba knife which is typically used for fish butchery. the difference looks like a deba is one sided and will need to know if the user is right or left handed. well made debas are delicate enough to fillet a fish, but strong enough to break bones if you have the correct technique. debas are not cheap tho. a nicely made deba can run 400 – 600 usd.
alternatively, I didn’t look thru all of tsubaya. they may have exactly what you’re looking for.
if they don’t have what you’re looking for, head up the street to a place called idaya. they sell kitchen tools and knives. maybe they have something for you.
On the subject of knives and cutlery, what is the best way to bring them back? I would assume you could pack them in your luggage with no issues. However, if you have larger items, would you be able to ship them home via FedEx/UPS/JapanPost?
