Okonomiyaki is a savory Japanese pancake, and the name literally means “griddled as you like it.” True to its name, it’s a flexible dish that can be customized with mix-ins and toppings to make it your own. This one’s a classic Osaka-style Okonomiyaki with a batter made from eggs, dashi, flour, cabbage, and scallions with a crispy layer of pork belly on top. Then it’s slathered in a sauce made with date syrup, ketchup, oyster sauce, Worcestershire sauce, and just a hint of curry powder for spice.   2. There’s a restaurant in my town called OKO Time that makes these and they’re fantastic! They have six or seven on the menu, as well as all sorts of sushi and Japanese American-restaurant standards.
