How to maximize our three full days in Tokyo?

Hello! First time to visit my dream and favorite country, Japan! Sadly it’s only for 5 days (arriving at Narita around 2:30PM local and on our last day, we plan to spend it at the Narita Airport from hotel checkout time to departure at around 4PM). Here is a brief rundown of our itinerary so far:

*Hotel is in Shibuya*

Day1 Sunday:
Afternoon to nighttime in Harajuku
Shop and dine night

Day2 Monday:
Meiji Shrine
Tattoo appointment in Harajuku
Head to Shinjuku the rest of the day

Day3 Tuesday:
Ueno Park
Asakusa
Tokyo Skytree
Go-Kart in Shibuya @7PM
Shibuya Sky @9PM

Day4 Wednesday:
Hachiko statue
Tokyo tower
Imperial Palace
Tsukiji Fish Market
Ginza
Akihabara?

Day5 Thursday
Narita Airport

Questions:
In this list if there’s anything i can skip, what would it be?

Is Akihabara “a must” stop? I love anime but I am totally fine to shop around Shinjuku, Harajuku, Shibuya for anime stuff if that is more feasible

Would starting our day early (around 7AM) be productive or counterproductive (tired early)?

Priorities:
Go-Kart (already paid for and scheduled)
Tattoo (scheduled)
FOOD!! (Feel free to recommend places!)
Some nightlife
Cultural experiences like temples, shrines and cherry blossoms (we are visiting in March)
