Reservations for Dinner at Restaurants

I’ve visited Kyoto twice and failed to learn a lesson the first time to make dinner reservation a couple days before hand. Found myself walking for a while (like 2 hours, mostly central and philosopher path area) to find any place that would take two travelers during dinner time, but most were all booked for the entire evening with some availability the next day (1st time settled for 7-11 ice cream + beer by the river, 2nd found ramen).

The best I can think of why that is so is the city size (smaller) + space available + kitchen prep + culinary culture, but I’m honestly not sure. Why is this the case in Kyoto?
