I found out my local Mituswa is stocking Okinawa Sweet Potatoes!! It’s been over a decade since I’ve tried them in Okinawa, I could never forget the taste. I just am not very good at cooking 🫠I bought them again a couple weeks ago, stabbed some holes & attempted to cook em in the air fryer. While the outside of the flesh was a vibrant, flavorful purple, the inside was reddish brown & tasted awful. I’m not sure if I held onto em for too long or if I perhaps undercooked them.
tldr; how do I bake these in the oven! What time/temp/any tips?
