If I take Keikyu Airport Line from HND to Shimbashi, are there any stairs to exit the station that would be difficult with luggage? Or are there always escalators?
Also same question if I take the monorail to Hamamatsucho and change to the Yamanote line to Shimbashi? Or maybe it’s not good to take luggage on the Yamanote at 7pm and I could take a taxi from Hamamatsucho?
There are both elevators and escalators. You may have to walk along the platform for a few meters to find one. Yellow signs on the platform and within the station have information about the station, including elevators. When you exit the station to surface level, not all the exits have an elevator, but there will be at least one exit with an elevator, so you can use the yellow signs to navigate to it.
I have travelled a lot in Japan with bad knees, so escalators and lifts were important.
It is almost always possible to find one, although you often have to walk further. Small country stations are an exception — overpasses often have only stairs.
Escalators are almost everywhere, including station exits. Sometimes not every exit has them.
For Shinbashi in particular, the Wikipedia entry has photos of each platform. You can see the directions to the wheelchair and lift access on the sign.

BTW if you are using lifts just because you have luggage, give way to people who need them more, like wheelchair users etc.
