The “best” Beef in Japan

One of my personal favorite activities when traveling around Japan is to try the local beef. Last year, I added Kobe, Noto, and Hida Beef to my list, and I will soon get the chance to try Yonezawa beef. I know the big three of Japan are Kobe, Matsusaka, and Omi/Yonezawa, but from your own personal experiences, where have you had the most enjoyable beef whether it be the quality or maybe just a really good restaurant.

For me personally, I think Noto beef is underrated, but maybe that was in part due to an amazing kaiseki I went too. Hopefully I don’t start any regional wars with this question
