Due to overwhelming shock at the ahi I pressed Into a round forbidden roll shape, I demolded my beautiful round MEAT GLUED ahi and went to a store and found a nice wood box to remold it into a square shape for tonight’s treat.
This added only 3 more hours of refrigeration. But I will say, that because I did not fully defrost it before mushing it into the mold, that It stayed too “chunky “when I repressed it. Which resulted in not as “smooth” as a flesh consistency.
