Working Holiday Tax Documents

Hey guys! Currently my friend and I are on a working holiday visa in Japan on our first job. Obviously we have to pay 20% non-resident tax rate which is directly deducted from our pay. We’re from Germany and our (non-Japanese and probably not informed) employer said we can get the taxes refunded back in Germany. Looking this up online, apparently there is no way to get the paid taxes back. Has anyone else had this experience and can let me know if there is any possibility?

And even if I can’t get refunded, I’d still want to receive any work related documents or even the official tax documents, e.g. income certificate, from our work here. Does anyone know which documents we can get (any other than tax docs) and if it’s possible to get all that through our employer or is the city hall where we are registered a better bet?
