First time travel

My wife and I are planning a honeymoon trip to Japan in May. We’ve never flown internationally, or really flown at all, and are running into some roadblocks trying to figure out some baggage stuff.

How can we tell what can be brought back from Japan in our checked in baggage? We’re looking at maybe buying some Japanese knives for the kitchen, for example.

How do we know what to declare customs on? My wife has been researching this but is getting a lot of mixed answers. Some people are saying if taxes were already paid on items in Japan, we don’t have to declare them, others the opposite.

What’s the best way to keep track of everything we bought, and is the dollar limit per good or total for all goods? She’s pretty sure it’s $800 but isn’t sure which way it’s counted.

Finally, some general baggage questions for actually traveling around Japan.

What’s reasonable to carry around with us? We plan on taking Zipair and are packing extremely light; carry on and two checked in bags per person. She’s thinking a smaller case inside a bigger one. Is this too much? She says we plan on buying a lot lol.
