for the wafu mushroom pasta I kind of took a few different recipes and just did what I wanted so I apologize if this doesnt make too much sense lol:
1. start boiling water for pasta (i used linguini) 2. in large pan melt a fair amount of butter. add the garlic 3. coat shiitake and shimeji mushrooms in butter, let cook on medium high heat. don’t stir much. mushrooms are really durable 4. add pasta to the boiling water 6. once pasta is almost done, save 1cup pasta water, then drain pasta 7. put some pasta water in mushroom 8. add milk to mushroom (i like milk personally but if you dont, the pasta water is fine on its own) 9. add soy sauce and miso paste, adjust to taste (try not to burn these ingredients) 10. add spinach, mix a little 11. add pasta and mix!
twist into plate, sprinkle parmesan or fresh grated parm, add chopped nori/dried seaweed (i used kitchen scissors and just cut it over the bowl), clumped parsley for garnish
I think wafu pasta also usually has bits of ham in it, but since I love large chunks of mushroom I just didnt think I needed it. This dish it just absolutely umami central already. Its got the holy duo of mushroom+butter AND soy sauce+miso. Like come on.
