Sushi Yuuki – Hirō, Tokyo, Japan

Hayashinouchi-san, from the popular Tokiwazushi in Yokohama, recently relocated to a new location just off the Hirō Main Shopping Street from 9 March. I joined a late evening seating starting at 8pm.

There are only some subtle changes to the course when compared to what was offered in Yokohama. The drink menu has been expanded and improved a bit, but the food itself was very much a mirror of the previous offering (in a good way). It shows how quickly he was able to adjust to his new setting.

I love the meal here because it reminds me of one of my first high-end sushi experiences at Sushi Mizutani many years ago where Hayashinouchi-san was second chef at the time.

Highlight dishes were the whale sashimi (best I’ve ever had… half the counter added a nigiri version at the end of the meal), kinmedai (with shari at a slightly higher temp than the rest of the course so it melted in your mouth), and kohada (just the right one-two punch with the sharp shari).

Hirō is becoming a bit saturated with sushi restaurants, but Sushi Yuuki will definitely establish itself as one of the top in the neighborhood.
