I’ve heard that some people differentiate zarusoba by serving it with thinly cut seaweed, but you should still serve it on a zaru (bamboo woven mat) or atleast on a seiro (container or mat used for steaming). This will allow the excess water to drip off of the soba noodles and prevent it from getting soggy.

    Other than the seaweed, this would be more of a morisoba, but your presentstion is still really good! Just nomenclature but it will help understand what you’re getting when deciding between a morisoba and a zarusoba.
