Hi so my dad’s friend own a poke shop so the salmon is sashimi grade. I went to visit today and they had a lot of waste of salmon. I think it was the belly that they don’t use (I forgot what else) but they store it in their freezer and give it to family at the end of the night or throw it away. Im talking about like 10 bags worth of “waste”. I’m not too familiar with salmon so I guess my question is, which part of the salmon fillet is not edible (raw) ? Would it be not edible if they also serve the salmon belly as parts of “Salmon” for their protein at their poke shop? Kinda want to be educated about this. Any information is appreciated:)
