How do you set up structured tutoring lessons (as opposed to free talk)?

I have been doing free conversation practice with a few different tutors on iTalki, but I think the time could be better spent for the money. Of course my speaking isn’t great, but I live in Japan and have many Japanese friends, so I have plenty of opportunities for conversation on a daily basis. Instead, I’d like to focus my tutoring hours on reviewing complex grammar that may not normally come up in daily conversation.

For context, I’m studying for the N2 following the Sou-matome series, which I know has been criticized on this sub, but the pacing and layout of it is overall a good fit for my learning style. The issue is that it has next to no practice drills for the grammar. I would really like to practice each week’s grammar points with a tutor, but I’m not sure how to set it up. Do I need to find a tutor that uses this textbook? Or should I try to assemble some practice materials from around the internet and send them to the tutor in advance? Something else?
