Health Insurance and Pension during short time between jobs

I am changing jobs, and I will be technically unemployed for around 1 week in-between jobs.

I understand that technically, I need to join the National Health Insurance and National Pension during that period. However, my question is what if I don’t? It just seems to be too much hassle to have to visit the city office two times just to join and then quit the insurance/pension.
