Indulgent nigiri set


Y’all were right from the previous post there was a bunch of connective tissue running through the tuna. I was still able to get enough solid pieces for nigiri after peeling it all away, the rest is in that mighty gunkan.

The rice turned out super well today, easy to work with and just the right amount of acidity. First time using Hitomebore rice, I love the texture.
