Help with Tokyo Itinerary, Travelling with 8 month old.

Hi,We are travelling to Japan during golden week i.e., will be there from 23 Apr to 8/ 9 May. Request if you could please help me with the below itinerary. Is it too much?
23-25 cannot be changed since they are non-refundable. I am open to trim down or add a day to my trip to make it easier for us.

* We are not much into temples or museums, rather would prefer a mix of amusement parks (which would be exciting for the baby too), a few botanical gardens & aquariums or science stuff.
* We would also love to add a long scenic train journey (Are joyful trains any good & are there any round trip ones that go North?) if possible on any day & skip anything beside Teamlabs from below.
* We really want to checkout the electronics market, hence chose Akihabara
