Addendum to poor man’s ahi sahimi

I posted a while back on my meatglue sashimi, and I’ve made another “batch.” This is not for everyone, but it is great for me, as I live rural and am frugal a bit.
I start out with two 12 oz bags of Ahi from Grocers Outlet. $7.99 each.
I cut up the odd sizes and I try best to knife out any large pieces of white membrane things, as it affects the cosmetic appeal for me.
I grind it up in my little bullet grinder and then add enough meat glue to make my hands or rather my gloves start to feel a bit sticky, I estimate its maybe 3 dollar worth of transglutaminase,TGM. I just recently found there are different types and I’m using the RM version, so next time I’ll order the pure formula. You want to use only enough or it will be too dry.
It blends fast into a soft consistency and then my preference Is to add a bit of killer red food color.
Press into a square shape with plastic wrap and chill 4 hrs.

Spray lightly with oil and roll in your choice of crust. Today I used 100% chia seeds pulverized in the bullet.
Pop in a hot pan or blowtorch it to blacken the crust and cook the edges. So, for $15.98 plus the TGM, it gives you a 7 inch x1.5 inch loaf.
