Mackerel or Saba (determine how many people you are feeding and portion appropiately)

Teriyaki Sauce (Makes a Cup)
1/4 cup soy sauce
1/4 cup sake
1/4 cup of mirin
1/4 cup of oyster sauce
1 Tbsp of Sugar
Directions
1 score your mackerel fillet on the skin and lightly salt both sides of fillet and allow to rest at room temperature for 15 min
2 Make your Teriyaki Sauce combining 1/4 cup of soy, sake, mirin, oyster sauce and 1 tbsp of sugar. stir until sugar is dissolved
3 Preheat non stick pan over medium heat and add 1-2 tbsp of neutral oil
4 Cook mackerel 90 seconds each side. skin side down first then flip.
5 Soak up oil with paper towel
6 turn heat down to med low and add 1 tbsp of teriyaki sauce per fillet on the scoring
7 Move fish around the pan for 30-60 seconds before flipping. Pull out of pan after addition 30-60 seconds a side. let your teriyaki sauce be your guide. Don’t burn the sugar
8 Enjoy !

The mackerels have just started turning up here on the coast so this was just the inspiration I needed! Is it possible to use something like white wine instead of sake?
I wish I could find mackerel where I live. I had some in Nikko and it was so good.
