Itinerary Check

I am planning a trip to Japan towards late October and leaving early November, this is the schedule I have made up so far. I fly into Tokyo and fly out from Osaka. I would like some feedback on whether this itinerary is realistic or not regarding time spent in each place. In total, I have about 16 full days and 15 nights. The following schedule is missing one day and I am not sure where to add it to. Hakone is a maybe since the only thing that I would like to do there is stay at a Ryokan with a private onsen in the room so if you have any other places that I could do that besides Hakone let me know. Also if it is worth staying overnight at Koyasan (Mount Koya) at a temple and if it is worth staying at Shirakawago overnight at a gassho-zukuri house. I have only added the things I want to do at Takayama, Kanazawa and Shirakawago since those are the ones I am not sure how much time I need to explore them.
