What kind of onions?


I know this might sound bizarre for some people, but here we go 🙂

When I was in Japan and tried kaiten sushi, they had salmon mayo onion nigiri. Someone posted about it in this sub already.

I loved it especially because of the onions! They aren’t as harsh as “normal” onions.

So my question is: Does anybody know what kind of onions they use for that? Are they pickled with sushi vinegar (I saw some recipes online), are they just soaked in water or are they a specific kind of onion?
