I will be visiting Japan with my fiance and in-laws in May. Our itinerary is as follows –

Arrive at AirBnb in Torigoe around 2 – 3:00 pm
Rest
Explore neighborhood, visit Akihabara
**18th May – Asakusa and Ginza**
Observe Sanja Matsuri at Senso ji in the morning
Lunch around Asakusa
Tokyo Skytree (for afternoon/evening view of Tokyo) and Sumida Aquarium around 3:00 pm
Visit Ginza at night and have dinner
**19th May – Roppongi**
*12:30 pm* Teamlabs Borderless (BOOKED)
Lunch
Explore Roppongi over the afternoon
\–Attend a personal social function at night–
**20th May – Shinjuku and Shibuya**
Around *11:30am -12:00 pm*: Shinjuku Gyoen
Lunch in Shinjuku
Explore shinjuku, Donki, Godzilla head
Head to Shibuya
Daikanyama, Takeshita Street, Shibuya Parco
8:40 pm : Shibuya Sky for night view of Tokyo
Shibuya Scramble
Dinner at Shibuya

**22nd May** \- Fuji and Kawaguchiko
Rent a car and drive to oshino hakkai, kawaguchiko, fuji ropeway, fuji Q highland, gotemba mall
**23rd May**
*9:00 am* \- Ueno Zoo
Ikebukuro
*4:30 pm* \- Making of Harry Potter Tour (booked)
**24th May**
Rent a car and road trip to Nikko – Shinkyo Bridge, Toshogu Shrine (preferable just the main shrine), Lake Chuzenji, Kegon Falls
*3:30 pm* \- Lake Chuzenji Cruise
Enjoy Sunset from the Lake
Drive back to Tokyo
**25th May** \- Free day in Tokyo, nothing specific planned

My concern is if this itinerary is too ambitious considering my in-laws are both around the age of 60. Shall I remove or add anything? What can be planned for the last day?
We are vegetarians so any suggestions for such restaurants in these areas are welcome.
Tips for attending the Sanja Matsuri would also help.
