Loads of hikes around the city, very accessible. The Isshu trail is the main one: https://4corners7seas.com/asia/japan/hiking-kyoto/kyoto-isshu-trail/. I recommend getting an app like AllTrails that can show you some of the lesser known hikes. Another nice walk is from Kurama up through the mountains and then back down to Kibuneguchi, very leisurely and you can get a nice lunch on the way back.
Start off with Mt. Daimonji as a nice warm up.
Followed by the trail up to Shogunzuka Mound.
Then it’d have to be Mt. Hiei.
I’d also recommend Mt. Atago, and as a bonus, if you go on July 31 you can take part in the Atago Sennich Mairi.
Finish it off with the Isshu trail that takes you around the majority of the city of Kyoto.
And this is just within the city itself. There are tons of mountains within the prefecture if you’re willing to travel just a little bit more.
It’s a bit of a ride south to Tenri for the start, but I really enjoyed the Yamanobe no Michi along the eastern edge of the Yamato plain. Cute villages, pretty temples and shrines, circling kofun burial mounds. Just lovely.
Kameoka to hozukyo to Kiyotaki is stunning. I’m an avid hiker and there are some real nice places away from most people
