Homebrewing enthusiats around ?

Hi community,
Wondering if there is any brewing enthusiats around ? I’d be keen to discuss and exchange tips on :
\-Ingredients,
\-Equipments
\-Legislation in Japan etc.
We are making kombucha and looking at setting up a small (small) brewery. We are running in a lot of issues, the biggest on is pasterization (殺菌)which would effectively kill all the probiotics and reduce the health benefit but is strongly “recommended” by the Hokenjo.
We are planning to start with 100liters, and scale up to 300,500 etc as we are figuring things out. Any recommendation on brewing equipment in Japan ?
I was hoping to find a couple of 100l tank on Yahoo auction but no luck so far !
For the rest (big nabe, auto siphon etc,) its mostly available on Amazon, tho its probably not the cheapest option.
Same for bottles, I was first looking at wholesale site like Alibaba but the min order are usually high (+1000), the shipping cost are huge, and its not the most eco friendly choice.

Strangely enough finding 330ml clear glass bottle for fermented beverage is quite an ordeal
