    It’s one of my favorite sushi and it’s currently in season (bought this at 99ranch). The heads are tossed in corn starch and dropped in 350F oil for 6 minutes

  5. Those look like botan ebi, spot prawns are usually sold as such. Also amaebi are smaller, two or three on one nigiri.

    I would devour everything regardless, looks delectable 😋
