So as you know that famous instagram worthy restaurant at shinjuku makes you fish your own meal and then prepare it how ever your like, frying and hot pot as example.
But is sashimi-ing my fish safe? I am under the impression that they do not flash freeze it since they prepare the one you catch , which sushi restaurants would flash freeze to kill parasites. I might just go there for fried fish which is not my favorite sort of fish just for the experience and would like to try sashimi-ing my caught fish if I knew they flash froze it

I got news for you. Huge amounts of sashimi is served fresh, as in never frozen.

I went there in Dec last year and we had 2 fishes in various cooking styles and sashimi. Didn’t fall sick from it but i get your point.. just didn’t think much about it that time..
