Eating healthy on a budget?

I started a full time teaching job last week, but I still have a month and a week to go before my first salary. I’m living VERY low budget until then. I only really have time to actually cook on the weekends, and most other times I’m either having to eat a bento for dinner, or just go hungry because I don’t want to eat a dinner with 3 grams of salt in it. Breakfast is usually good, I always eat lots of fruit, yogurt, sometimes a muffin. If I’m in a pinch, a peanut butter sandwich (or pocket) with strawberries and yogurt, but lunch and dinners are tricky (I have to eat lunch at work) You just can’t find real vegetable servings in restaurants or take home food here. I know the answer is cooking my own food, but I hardly even have time to learn recipes, let alone set aside an hour or more to actually prepare a meal. I suppose I could make a little bit of time every week to cook something, but it will have to be something that can last several days in a tupperware. Nabe is really healthy if you don’t count the salty broth. Anyway, I would love some suggestions
