“Black” and “White” ramen at Yoshikawa in Saitama

1. Yoshikawa is an incredibly unique ramen shop, serving sardine based ramen and other sardine based dishes in the middle of Saitama prefecture, North of Tokyo.

   The menu at Yoshikawa is quite extensive, including all kinds of iwashi sardine based ramen and tsukemen. Their main items are their iwashi niboshi broth ramen, which come in a “white” (shiro) and “black” (kuro) version.
   What you’re seeing here is the black version on the left and the white on the right. Main difference is the tare, which includes more hefty dark soy sauce for the black version and a more light and delicate tare for the white version.
