How to break down hamachi (yellowtail)

My restaurant buys hamachi pre filleted so it’s just the flank. No head, no guts, no spine. I figured this sub doesn’t see this part of the process much so I wanted to share. The chopped up bits are used in our spicy yellowtail mix. And at the end there is a nice yellowtail crudo I made with this fish.
