  1. Looks delicious! The fin (engawa) is definitely one of my favorite cuts of sashimi. Also if you ever get some tai (japanese snapper), place a slice of shiso and a bit of umeboshi (pickled plum) on top. It’s a wonderful pairing that brings out the flavor of the tai. Never tried it with Hirame, but seeing you use shiso with it made me think that it would be a good pairing. Love your videos by the way!

  2. It’s up to your preference! Sashimi if you want a light snack, or sushi if you’re feeling for a meal!
