A superb example of Aji from the Sea of Japan just off Hamada in Shimane prefecture. Fat content is approaching the peak of the season giving an almost pillow like texture to the fish. The neta seen pictured here was sliced into three even pieces and layered across the shari to enhance the texture. This just might be the best Aji I’ve had in a few years.
