Why does this previously frozen top loin Big Eye from Wild Fork brown? I thawed it in salty water for 15 minutes and then refrigerated over night. It looked the same (brown) after the 15 min salt bath. Has a bit of a slime to it in my opinion. Good for nigiri still?
