Why do some Otoro look different from others?

I have been eating a lot of Otoro recently, and I noticed that there are generally different looking ones. One type is the really pink type which gets its light color from the fats (1st pic) the other is really bright red, but with many large white streaks (2nd pic). Generally I find the pink type a lot tastier, but I’m wondering what the difference is.
