Ryokan Recommendations

Looking to stay 2 nights in a ryokan in a nice area in Kyoto. Going to Japan in a few months and all the research and options are a bit intimidating, so really hoping someone has good insight here at different price points. Willing to do a reasonable splurge on this experience if both breakfast and dinner are included, but of course I am also looking at budget-friendly options. I am looking for one in a historic or countryside setting rather than in the city. Additionally, I would love for the onsen to be open-air. I am not set on having a private onsen or dinner included, but those would be nice if it is an option.

I would also love to do kimono/montsuki rentals. If the ryokan is near one, in a relatively explorable area, that is a plus.
