My question: how is this allowed? i will be honest i ate a few pieces and surprisingly did not get sick. i’m not totally sure it sat out for hours but i have to assume because the same stuff was there when we got there and left and it wasn’t cold

I like how you automatically assumed it was out for hours just because there was sushi where the sushi was before… you know, like there is some chef that’s, and just a wild guess here, replenishing the sushi as they’re being eaten.
Just cause it looked like the same rolls were there doesn’t mean they went replenished. And I’m sorry but a tiny little piece of sushi won’t stay cold in a room temp room for long. It’s fine
Looks pretty solid for buffet style, I’d be hitting that exclusively if I was there. I may be a sushi snob, but I am a sushi lover first and not above crushing some AYCE that looks like that. I would be 20 salmon nigiri deep before Making my last dish with all rolls before going into a food coma.
