Engineering in Japan – late 20’s, realistic goal?

Hey guys, so I am a 22yr old currently pursuing a degree in Mechanical Engineering. I was supposed to graduate this year but life happened and things did not fall into place like I had hoped. i’m still in the process of getting my associates degree in community college and won’t graduate uni until i’m 25. I did a little bit of research and read that i’d probably need some experience in the field so a realistic age i’m looking at would be around 27-28 before planning to move. I’ve been self studying Japanese (around N2 level right now) and hoping to be well past N1 by the time I graduate.

My question is if my goal is realistic? Any tips you guys have to make my goal more obtainable? I’ve already been to Japan two times now in Tokyo and Kansai area to get a feel for the country. I’d appreciate any help. Thanks!
