I think kakigoori has been one of the most evolving Japanese foods for this 20 years.
Shaved ice itself gets soft and furry. Sauces and add-ons get not only modestly sweet, but also elegant. Combination of flavors gets much refined. Stuffs are put in and on under consideration of texture and interaction.
To be sure, such kaigoori looks expensive, but if you have never eaten, please try it. Trust me.
