Long-term stay in Japan after graduation Language school

So I just got a COE to go to a language school in Utsunomiya this year. As for my background, I only have a graphic design diploma and a graphic design college degree, not a bachelor's degree. My plan is to learn Japanese as fast as possible while staying in school and working at a convenience store. After that i will try to apply for IT job or graphic design related job, i don't have any experience so i don't have this high up. My second plan is if i don't get any offer to work as a desk job, i go to get specific skilled visa in restaurant or nursing.

I'm trying to achieve senmon gakkou, but money is a problem. So for the second plan, I try to work in Japan for about 4 years to save money and go to a senmon gakkou and study there, graduate and change job.

I don't know any other way to do it, because my goal is just to live in Japan.

Desk job is good, but I don't know if I can get hired without bachelor degree or experience, but for the language I'm sure will get the best.

I heard there are many people from my country get a specialist in humanities visa without any bachelor degree and related, and they work in restaurant. He stay in Japan for 9 years and there is no sign that his visa will be canceled, he is working in a restaurant, I don't know if this is illegal or not. But the reason he can do it, I think maybe he hire a lawyer to lie about his position in restaurant.

Goal: I want to stay and live in Japan legally for life. But I don't know how, because my background. No money, no bachelor's degree. Just a passion for Japan.
