Nodoguro, the best white fish for nigiri.


Have you tried Nodoguro? It’s also known as Akamutsu or Blackthroat Seaperch.

It has excellent fat content that can turn into deliciousness when you render it with a blowtorch. I honestly prefer this to ootoro.

You can either brush it with shoyu or just sprinkle some salt. Both options pair really well with seasoned sushi rice.
