Gluten free diet in Japan

Hello everyone,

I read on the internet that Japan is not very gluten free friendly country. Do you have any advices for me as a person with gluten free diet?

One important note to mention I am okay with gluten in soy sauce for some reason I don't have any issues after eating gluten soy sauce. Hopefully this will make it less problematic for me as usually people couldn't eat most of the food due to soy sauce in it.

I read that soba noodles are gluten free but only if they are 100% from buckwheat floor. Are they usually 100% or should I always ask?
