2 week itinerary in Japan, mid November

My partner and I are planning to visit Japan for roughly two weeks in November. I would be very grateful for any suggestions or comments!

To preface this itinerary:
– Interests/vibe: more art/fashion/food (though not so much interested in kawaii/Nintendo/Disney side of things).
– Veggie: My partner and I are also vegetarian (though sometimes will eat fish if in dire straits).
– Travel style: We will also only be taking backpacks (max 8kg, though I will be returning with a packed foldable duffle bag I can check on the flight home, as I have no doubt we will be shopping in Japan). This makes travelling around and navigating train stations less of a hassle, in my opinion from prev. experience.
– Budget: We are trying to keep to a relatively modest budget, with a few restaurant meals here and there, and staying in low cost but comfortable accommodation.
– Normally I have a tendency to pre-book everything, plan (perhaps excessively). Though am trying to keep options more open.

**debating between Okinawa/heading to Seoul

Questions:
For money/time/effort reasons – I’m tossing up between visiting Okinawa, or Seoul.
Is it worth Going to Okinawa? We are from Australia and are fortunate to not have a shortage of tropical settings, beaches, diving etc. Would it be worth skipping Okinawa and heading to Seoul for the tail end of the trip?
