I was watching one of the Sumo Food videos over on YouTube (https://www.youtube.com/watch?v=fLBtVHwDCfA&t=1522s) and saw them stir-frying a dish called Kote-chan. After some research, I found it probably refers to beef organ meet (referred to as beef hormone in Japan, I believe), however I couldn't discover just what organs go into kote-chan. Any idea?
