Who are making the best knives in Japan?

I have been looking for some high quality Japanese cooking knives, something versatile like a Santoku or Gyuto and something for more specific use such as a Nakiri or Usuba. Unfortunatly, I dont have thousands to spend… Does anybody have recommendations?

  1. Just go to your local hardware store and get some nice high carbon knives and a couple of good whetstones.

    Then learn how to keep them sharp and from rusting before you invest in really expensive knives.

  2. Talk a walk around Kappabashi Street near Asakusa. It’s filled with handcrafted knife stores with great knives for every budget.
