How meticulously do Japanese people stick to “proper” stroke order when writing?

Basically, just that. Do native Japanese people tend to stick faithfully to textbook stroke order? And is as much attention paid to Kana stroke order as that of Kanji?

Apologies if it seems like a stupid question (or two stupid questions) but with so many characters to master it seems like a hell of a lot to retain. I know the basic principles of left-right, top-bottom etc, but I've also seen a few exceptions.
