Spicy Scallop Sashimi

Happy Friday night everyone! Hope your week was a good one. Mine was confusing and a little sad but all I can do is keep my head up. I decided to make one of my favorites for dinner, a spicy scallop sashimi served almost like a poke (actually I use the same spicy mayo recipe for my salmon poke!)

To make I use frozen scallops from Costco or Trader Joe’s sourced in Japan. I then chop them (after removing the foot) up to about 1/8 inches size rough cubes. I make my spicy mayo with Kewpie, Sriracha, Sesame Oil, Mirin, Togirashii and Masago (lots!) and mix it all up and the add in with the chopped scallops and stir to combine. It’s currently chilling in my fridge to get a little marinated and then I will enjoy some! This is the perfect treat as sashimi, nigiri, a hand roll with some cucumber or a maki roll with whatever you want. So delicious!

I’ll share a picture when it’s ready. It takes very little time and effort and keeps for a couple days in the fridge.

EDIT: It’s ready!
